Pink Bourbon Punch is a fun, fruity, and delicious micro-lot from the El Vergel Estate in Tolima, Colombia.

Estate History:

In 1995, Elisa and Shady Bayter started cultivating coffee at the El Vergel Estate, located in Tolima. In 2015, they successfully harvested their first varietals. In 2017, they began growing the Pink Bourbon varietal in order to differentiate themselves in the local coffee market as well as at the international coffee trade level.

Process Description:

Pink Bourbon Punch uses an anaerobic natural process, which begins with a 12-hour pre-fermentation in tanks. This step allows the coffee cherries to begin developing bold, fruity flavors. The cherries then undergo a 24-hour anaerobic fermentation in sealed tanks, where an oxygen-free environment is created to draw complex flavors out of the coffee bean.

During the drying stage, cherries are placed inside a mechanical silo for four days to reduce the moisture content of the beans. Next, the beans are sun-dried on raised beds for 20 days, ensuring they reach the correct moisture level. Achieving the proper moisture level helps preserve flavor and quality.

Once the ideal moisture level is reached, the coffee spends 30 days in GrainPro bags to stabilize the beans.
