Intro:

Pink Bourbon Punch is a fun, fruity and delicious micro-lot from the El Vergel Estate in Tolima, Columbia. 

Estate History: 

In 1995, Elisa & Shady Bayter started cultivating coffee at the El Vergel Estate located in Tolima. In 2015 they had successfully harvested their first varietals. In 2017 they started growing the Pink Bourbon varietal in order to differentiate themselves at the local coffee market as well as at the international coffee trade level.

Process Description:

Pink Bourbon Punch is an Anaerobic Natural process which begins with 12-hour pre-fermentation in tanks that will allow the coffee cherries to start developing bold, fruity flavors. The cherries then undergo a 24-hour anaerobic fermentation in sealed tanks where an oxygen-free environment is created to pull the complex flavors out of the coffee bean. 

In the drying stage, cherries are placed inside a mechanical silo for 4 days in order to reduce the moisture content of the bean. Next the beans are sun-dried on raised beds for 20 days, ensuring the beans reach the correct moisture level (the correct moisture level will help preserve flavor and quality).

Once the ideal moisture level is reached the coffee will spend 30 days in GrainPro bags to stabilize the beans. 

Flavor Profile:

Through the intentional and thorough process of growing, processing, roasting, and tasting the coffee to produce the highest quality crop to cup experience- the coffee tastes of ripe watermelon that develops into fruit-punch, and balances out with subtle clove. This coffee will be roasted to order for you to share and enjoy!
